Weavile as a Check

Weavile @ Choice Band
Ability: Pressure
EVs: 252 Atk / 4 SpD / 252 Spe
Jolly Nature
- Pursuit
- Knock Off
- Icicle Crash
- Ice Shard

Weaviles typing, and speed is perfect for dealing with latios. Not only does it outspeed but it easily OHKOs with knock off allowing your team to strive over other teams with specs latios. Pursuit is another attacking option, if you feel that your opponent will switch pursuit will also easily KO from full. Ice Shard can be used if the Lati got speed boosts but it fails to KO from full, or even after stealth rock damage. Icicle Crash could be used instead if your opponent has say a weakened Mega Diancie, and you really want to get rid of it. Unfortunately weavile cannot switchin to latios due to its minuscule bulk, forcing you to play aggressively with it.
252 Atk Choice Band Weavile Ice Shard vs. 0 HP / 4 Def Latios: 222-264 (74.2 - 88.2%) -- guaranteed 2HKO (you need a max roll to kill after rocks)
252 Atk Choice Band Weavile Pursuit vs. 0 HP / 4 Def Latios: 222-264 (74.2 - 88.2%) -- guaranteed 2HKO (again you need a max roll if they don't switch)

M-Gardevoir as a Check

Gardevoir @ Gardevoirite
Ability: Trace
Shiny: Yes
EVs: 16 HP / 8 Def / 232 SpA / 252 Spe
Timid Nature
IVs: 0 Atk
- Hyper Voice
- Psyshock
- Focus Blast
- Will-O-Wisp

M-Gardevoir's typing and bulk unable it to withstand most of Specs Latios' moves (with only Psyshock being an almost guaranteed 2HKO) before retaliating with a powerful Hyper Voice which, I'm pretty sure you all know, straight up OHKOes. As a bonus, M-Gardevoir, being a mega, is immune to Latios' Trick, meaning something's gonna get hit hard/KOed next turn.
252 SpA Choice Specs Latios Psychic vs. 16 HP / 0 SpD Mega Gardevoir: 84-100 (29.8 - 35.5%) -- 32.7% chance to 3HKO
252 SpA Choice Specs Latios Surf vs. 16 HP / 0 SpD Mega Gardevoir: 113-134 (40.2 - 47.6%) -- guaranteed 3HKO
252 SpA Choice Specs Latios Psyshock vs. 16 HP / 8 Def Mega Gardevoir: 138-162 (49.1 - 57.6%) -- 96.1% chance to 2HKO

232 SpA Pixilate Mega Gardevoir Hyper Voice vs. 0 HP / 0 SpD Latios: 416-492 (139.1 - 164.5%) -- guaranteed OHKO

Nightmare Fuel (Jirachi) @ Leftovers
Ability: Serene Grace
EVs: 252 HP / 224 SpD / 32 Spe
Careful Nature
- Iron Head
- U-turn
- (Healing) Wish
- Protect/Stealth Rock

Jirachi is a really solid switch into Specs Latios, probably being the best switch in out of everything in the A ranks of the VR list. Jirachi takes little to nothing from Draco Meteor, Surf, or Psyshock, and Hidden Power Fire only does 43% max to Jirachi, so that damage can be easily wished off with Wish in conjunction with Protect, meaning that Jirachi can beat Latios pretty handily. If you prefer a more standard and effective Jirachi set, you can always run the standard Utility set with Rocks, just keep in mind that you have to make sure that Jirachi doesn't get worn down into range of being 2HKOed by Hidden Power Fire. Healing Wish is in parenthesis because the utility set will run healing wish over wish for the sake of offensive utility.
252 SpA Choice Specs Latios Hidden Power Fire vs. 252 HP / 224+ SpD Jirachi: 146-172 (36.1 - 42.5%) -- 93.2% chance to 3HKO after Leftovers recovery
252 SpA Choice Specs Latios Draco Meteor vs. 252 HP / 224+ SpD Jirachi: 117-138 (28.9 - 34.1%) -- 99.6% chance to 4HKO after Leftovers recovery
252 SpA Choice Specs Latios Psyshock vs. 252 HP / 0 Def Jirachi: 49-58 (12.1 - 14.3%) -- possibly the worst move ever
252 SpA Choice Specs Latios Surf vs. 252 HP / 224+ SpD Jirachi: 108-128 (26.7 - 31.6%) -- 29.2% chance to 4HKO after Leftovers recovery
252 SpA Choice Specs Latios Psychic vs. 252 HP / 224+ SpD Jirachi: 40-48 (9.9 - 11.8%) -- possibly the worst move ever

Here's something a bit out of left field. Empoleon as a hard check.

Empoleon @ Leftovers
Ability: Torrent
EVs: 252 HP/172 Def/84 SpD
Calm Nature
- Scald
- Defog
- Roar/Toxic/Stealth Rock
- Knock Off/Toxic/Stealth Rock

The penguin is a rare sight, but its strong 84/101 special defenses and Water/Steel typing allow it to easily tank any move. Specs Draco does 35.4 - 41.9%, which limits its switchins, but once in, Latios is on a timer (Toxic) or losing its Specs (Knock Off, which does 44.5 - 52.4%). Ice Beam does 43.1 - 51.1% (an almost-certain 2HKO after rocks), but is pretty rare outside of Specs sets.

Scizor @ Scizorite
Ability: Light Metal
EVs: 248 HP / 60 Def / 200 SpD
Impish Nature
- Swords Dance
- Roost
- Bullet Punch
- U-turn / Pursuit

Mega Scizor can avoid being 2HKOed by anything Latios carries except Hidden Power Fire. It can then threaten to OHKO back with U-Turn, heal up with Roost or eliminate Latios with Pursuit.

252 SpA Choice Specs Latios Draco Meteor vs. 248 HP / 200 SpD Mega Scizor: 131-155 (38.1 - 45.1%) -- guaranteed 4HKO after Stealth Rock
252 SpA Choice Specs Latios Surf vs. 248 HP / 200 SpD Mega Scizor: 121-143 (35.2 - 41.6%) -- guaranteed 3HKO after Stealth Rock
0 Atk Mega Scizor U-turn vs. 0 HP / 0 Def Latios: 258-306 (85.7 - 101.6%) -- 87.5% chance to OHKO after Stealth Rock

Mega Altaria as a check.

Altaria @ Altarianite
Ability: Natural Cure
EVs: 252 HP / 136 Def / 92 SpD / 28 Spe
Impish Nature
- Body Slam
- Dragon Dance
- Heal Bell / Refresh
- Roost

Altaria is a great switchin to just about all Latios variants, and while Specs is its only set that allows it to 2HKO Altaria (with Psychic that is, since Psyshock only has a chance to 2HKO after rocks and you should be running Psychic anyway), Altaria can safely switch into all of its coverage options as well as Trick, meaning it can force mindgames for the Lati player since they can only click Psychic to avoid giving the Altaria player a free switch. And of course, in return, Altaria can either start setting up if its checks are thoroughly weakened or it can throw out a Body Slam to OHKO Lati or potentially cripple one of its teammates in the process.

252 SpA Choice Specs Latios Psychic vs. 252 HP / 92 SpD Mega Altaria: 195-229 (55 - 64.6%) -- guaranteed 2HKO after Stealth Rock

252 SpA Choice Specs Latios Surf vs. 252 HP / 92 SpD Mega Altaria: 65-76 (18.3 - 21.4%) -- guaranteed 5HKO after Stealth Rock

0 Atk Pixilate Mega Altaria Body Slam vs. 0 HP / 4 Def Latios: 312-368 (103.6 - 122.2%) -- guaranteed OHKO

Ability: Defiant
EVs: 252 Atk / 4 SpD / 252 Spe
Adamant / Jolly Nature
IVs: 29 HP
- Swords Dance
- Knock Off
- Sucker Punch
- Iron Head

Bisharp comes in when Latios KOs something and forces it out with the threat of Sucker Punch. It can either Sucker Punch if it expects Latios to stay in, or if it is locked into Psychic/-2 Draco etc. it can use Swords Dance to take advantage of the lock and proceed to immensely threaten the opposing team. It can't switch in on anything other than Psychic, however.

Googly's pet is one of a very small number of Pokemon that is able to reliably switch in and beat Choice Specs Latios thanks to absurd special bulk combined with reliable recovery.

252 SpA Choice Specs Latios Draco Meteor vs. 252 HP / 252+ SpD Umbreon: 190-225 (48.2 - 57.1%) -- guaranteed 3HKO after Stealth Rock and Leftovers recovery

Tyranitar lives any one of Latios's unboosted moves and outspeeds to OHKO with Crunch, or OHKO with Pursuit as it switches out. Come on, y'all know how this works.

252 SpA Choice Specs Latios Draco Meteor vs. 0 HP / 0 SpD Tyranitar in Sand: 211-250 (61.8 - 73.3%) -- guaranteed 2HKO

Clef is a good tios' check in this case. He cant switch on a latios' psychic move for sure, but at the same time it can ohko it with moonblast. I didnt choose the lefties bulky one since its a 50 50 cuz lati can do the psychic move (and 2hko it) or trick it when the clef is twaving. Here u are calcs.

252 SpA Life Orb Clefable Moonblast vs. 0 HP / 0 SpD Latios: 304-359 (101.6 - 120%) -- guaranteed OHKO

Slowking @ Leftovers
Ability: Regenerator
EVs: 252 HP / 180 Def / 76 SpD
Calm Nature
- Calm Mind
- Scald
- Psyshock
- Slack Off

Although Slowking can't switch into Specs Draco Meteor, it resists every other move Latios carries and can even Calm Mind on it after Latios has KOed something. If it faces Latios in a 1v1, it can even win if you manage to predict a Draco Meteor and click Slack Off, which allows you to boost your stats later. The danger with using Slowking is that it can get Tricked which means you have to play carefully around that. Ice Beam can be used if dealing immediate damage to Latios and Tangrowth is important.

252 SpA Choice Specs Latios Draco Meteor vs. 252 HP / 76+ SpD Slowking: 249-294 (63.1 - 74.6%) -- 28.1% chance to 2HKO after Leftovers recovery
252 SpA Choice Specs Latios Psyshock vs. 252 HP / 44 Def Slowking: 111-132 (28.1 - 33.5%) -- 94.5% chance to 4HKO after Leftovers recovery
252 SpA Choice Specs Latios Psychic vs. 252 HP / 76+ SpD Slowking: 86-102 (21.8 - 25.8%) -- possible 5HKO after Leftovers recovery
