Alright so bisharp doesn't necessarily love facing hydreigon due to the fear of fire blasts. However, with Z revealed after tanking a knock off, or after just using roost, it's immediately assumed it's Dark Pulse/Draco/Roost/Defog or UTurn or Taunt. As soon as it's apparent it's not LO nor a choiced set bisharp are lured in. Dark Fighting is nice coverage in general and this set doesn't sacrifice overall effectiveness by any means. Being able to mutilate fat steels like empo and lix is always nice and AoA (reduced from protect)+ Dark Pulse is enough to take out shark.

Defog Togekiss, but with extra speed to creep Adamant Bisharp and Aura Sphere to kill it before it can use Iron Head or Swords Dance. Bisharp likes to switch into Togekiss once it's revealed to be leftovers, to possibly gain a Defiant boost from defog and/or force it out, so it'll be taken by surprise when it gets outsped and OHKOed. While this set gives up the utility of Heal Bell or the paraflinch Thunder Wave in the last slot, once Bisharp is gone, Togekiss can defog freely, so this set is good for teams that really need the compression.
Fire Blast is also an option that comes with the benefit of hitting Scizor, but that needs to be hit on the switch as banded Bullet Punch OHKOs after rocks. Aura Sphere also does more to rockers like Empoleon and prevents Stakataka from freely setting up. The EVs can also be optimized, such as 36+ SpA for more power.

Was going to do this with Sylveon but that mon is ass. Bisharp probably won’t scout the Babiri if it gets a free switch in. An unboosted Iron Head only 3HKOs Florges with the berry. HP Fighting cleanly OHKOes Bisharp after rocks. HP Fighting is still a useful tool to still touch Mega Aggron and Mega Lix as a last ditch effort. Leftovers can be used too if you don’t want the berry to be complete overkill.

You don't even need to sub up thanks to the berry if you can hit it on switchin, but subs a lot safer. If it doesn't lose its berry, it might even be able to beat Sharpedo depending on it's health.

Scizorphobic's set seems the most efficient. It doesn't make Hydreigon lose consistency throughout matches, nor does it make Hydreigon lose effectiveness, and it makes for a good lure to Steel-types in general, not just Bisharp.

The moment Hydreigon reveals Defog or Roost, the opponent is less likely to assume it has super effective coverage for Steel-types, hence they're more likely to stay in.

Just, please, don't forgo Draco Meteor. The set should be Draco Meteor, Dark Pulse, Focus Blast, Defog/Roost/Taunt.

I vote for snorlax142857's Togekiss since it's dumb to waste a slot for hp fighting or to run a z-move for a mon like Bisharp, Togekiss does the job perfectly, Fire Blast / Aura Sphere fits pretty well on the set, once the opponent sees defog he's likely to wanna bring Bisharp so it's effective as a lure and having a defogger that doesn't allow Bisharp to come in is pretty nice.
 
I vote for the bat. I'd never play ballsy against a Hydreigon anyways since even Z-Draco does a metric chunk ton. The Raikou I'd never stay in on since shiny basically reveals you're the aura sphere Raikou. The others, like Cress and Florges, while effective, take moveslots away from two mons that really appreciate having the 4 of them. The bat would not only be the one I least expect, but takes a fresh new spin on the mon since the normal bat sets have been admittedly mediocre lately.
